About the Job
Nile Breweries is seeking an Operator to safely operate and maintain designated brewing process areas, equipment and related processes to achieve optimal plant and process performance.
The successful candidate will support brewing operations across areas including the Brewhouse, Cellars and Filtration, while ensuring safety, quality, equipment reliability and efficient use of resources.
Key Responsibilities
Safety
- Attend safety briefings covering incidents, near-misses and workplace risks.
- Review MES/digital brew sheets and previous shift information.
- Receive and provide shift handovers covering process updates and equipment status.
- Deep clean, inspect and lubricate equipment.
- Apply 5S principles to maintain an organized and efficient work environment.
- Identify and report equipment defects and unsafe conditions.
- Carry out assigned ATO tasks.
Quality and Brewing Operations
- Monitor and maintain brewing process parameters across the Brewhouse, Cellars and Filtration areas.
- Conduct Apparent Extract (AE) and Original Extract (OE) analysis.
- Perform beer, tank, colour and volume analysis according to required schedules.
- Monitor fermentation vessel parameters, including temperature, deviations and yeast activity.
- Carry out frontline problem-solving to maintain product quality.
Cleaning and Maintenance
- Perform Cleaning-in-Place (CIP) activities for tanks, vessels and pipelines.
- Remove trub and conduct decanter bypass analysis.
- Run CIP during double brewhouse downtime.
- Start and monitor steam systems.
- Conduct basic maintenance activities, including valve changes and equipment inspections.
Performance and Raw Materials
- Monitor equipment performance and report deviations.
- Ensure effective shift handovers.
- Coordinate raw materials and process orders.
- Track beer loss, plant availability and process deviations.
- Capture laboratory, filtration and tank data in the MES system.
Breakdown and Troubleshooting
- Respond promptly to equipment alarms and process deviations.
- Escalate unresolved filtration and brewhouse issues to the relevant technical teams.
- Use problem-solving tools such as PFR, 5 WHY and PTCA to identify root causes.
- Coordinate with artisans, specialists and suppliers to resolve operational issues.
Teamwork and Leadership
- Participate in daily coaching with Brewing Area Managers.
- Support colleagues with troubleshooting and process improvements.
- Participate in safety pillar reviews.
- Lead or support initiatives focused on 5S, hazard elimination and continuous improvement.

Minimum Requirements
Applicants should have:
- A National Diploma or higher in:
- Food Science
- Industrial Chemistry
- Engineering
- Or a related field.
- PC literacy, including familiarity with Microsoft Office and SAP.
